Ingredients:
3 cups roasted/steamed butternut squash
1 yellow onion
1 TBSP olive oil
1 cup cottage cheese
1 cup milk
6 oz shredded cheddar cheese
12 oz whole grain elbow pasta
¼ cup breadcrumbs
1 TBSP garlic powder
1 TBSP Italian seasoning
6 slices bacon (optional)
Directions:
1. Roast or steam butternut squash and peel off skin when cooled
2. Start boiling water while putting other ingredients together
3. Cook bacon if using and allow to cool before dicing
4. Chop finely and sauté onion in 1 TBSP olive oil
5. Puree squash with cottage cheese and milk
6. Shred cheese if not previously shredded
7. Mix breadcrumbs with garlic powder and Italian seasoning
8. Cook pasta according to package directions
9. After pasta is cooked, combine with squash puree in a 13x9 pan
10. Mix in bacon if using
11. Sprinkle cheese evenly on top or mix in if preferred
12. Add breadcrumbs topping
13. Bake at 350 degrees for 15 minutes
