Ingredients:
2 cups fresh basil
¼ cup olive oil
2 garlic cloves (roasted or sautéed)
Juice from ½ a lemon
2 cups spinach
¼ cup pistachios
¼ cup grated parmesan (optional)
Directions:
1. NOTE: Preferably you want to cook the garlic or you will get a super strong garlic taste, which isn’t a bad thing as long as you really like garlic (either roast or sauté)
2. Measure everything out into a food processor… you can also use a high powered blender but food processor is easier I think
3. After grinding everything up and blending it evenly, make sure it tastes good, add salt/pepper if needed
4. Spread on top of veggies, protein, grains, whatever you like! Yum!
Have you ever had pesto before?? Did you like it? Was it traditional pesto made with pine nuts or a fun variation like I did?? Pine nuts are expensive and not my favorite nut so I frequently replace them with walnuts in most recipes. This could also be made with walnuts or cashews in place of the pistachios but would obviously create a different flavor. When I buy nuts I usually buy raw and unsalted... however I always buy my pistachios salted... are they even made unsalted?? I don't think they would taste very good...
