Ingredients:
¼ cup nuts (I used peanuts but walnuts/cashews would work also)
½ cup rolled oats
¼ cup coconut butter (NOT oil)
¼ cup coconut flakes
¼ cup water
¼ cup chocolate chips (optional)
Directions:
1) Measure the nuts, oats, coconut butter, and coconut flakes and blend in food processor.
2) Transfer “dough” to a large bowl and add water GRADUALLY. You might not use the whole ¼ of a cup, you’re just adding moisture for better consistency.
3) If you go overboard on the water and your balls become too soft and mushy, simple transfer back to food processor and add more oats. Or if you don’t mind eating the whole oat just gradually add oats to your dough mixture in your bowl.
4) Roll into balls and store in fridge. You don’t need to store them in fridge, they just taste better and hold together better that way in my opinion.
Do you love coconut as much as I do?? Have you ever tried coconut butter before?? What about coconut oil???
